Athlete Spotlight: Nick Pantazides

What got you into CrossFit? My very first experience was from my sister-in-law.  She had been doing crossfit about 2 years at the time and tried to get my wife and I to participate.  We did a team chipper workout and it about killed me.  I could not stand for about 30 minutes without feeling like I was going to black out.  I did not like it.  2 years later, my wife and had had become avid climbers, but we had plateaued and needed something to help us progress.  We Grouponed around, hoping to do it a couple of months, break through our plateau, and take home some knowledge of we need to do to better ourselves.  Our first round was at CrossFit Alpharetta.  It was fine, but nothing worth sticking around.  Then we found CrossFit Breaking Boundaries.  Our first workout was Memorial Day Murph.  I was the last one finished at 1 Hour, 42 minutes.  I walked the whole last mile.  But everyone was there still cheering.  I felt like I belonged.  A few weeks in, we were asked to do a competition, and we obliged.  The competition was the day our Groupon for CFBB expired, and I was sad.  I really wanted to stick with it, not just for the workout, but for the people.  After our competition, we went over to Debbie’s house, and it was then.  I was sold, not just on CrossFit, but on the new family I had found.  We signed up the following Monday and been here ever since. What was the turning point for you where you knew you were gonna...

Athlete Spotlight: Jim Huling

CrossFit Breaking Boundaries’ new series, Athlete Spotlight kicks off with one of CFBB Roswell’s most uplifting, hardworking and encouraging athlete, Jim Huling. What got you into CrossFit? When I turned 59, I wanted to find something that would set the stage for my next decade; that would allow me to get back in shape and even go beyond any level I had achieved before. CrossFit was unlike anything I had ever experienced, combining strength and fitness in constantly varied workouts, all done in an exciting team environment.  I knew immediately I had found exactly what I was looking for! What was the turning point for you where you knew you were gonna stick with this craziness we call CrossFit? This may sound crazy, but it was after my first workout with Coach Larry. It was such an amazing experience that I knew I wanted to come back every day.  In fact, I never even left the box!  As soon as the WOD was over I signed up and became a member of CFBB!  Today, I can’t imagine life without CrossFit and CFBB. What has been your proudest moment of CrossFit? My proudest moment so far was recently when I hit a back squat PR increasing my weight by 30 lbs. When I logged the result into my phone app, I was amazed to see that I had actually increased my back squat by 60 lbs since starting CrossFit only a few months before! What is your favorite exercise? This may be hard to believe, but my favorite CrossFit exercise is “Stone to Shoulder”! I really love heaving those stones...

Mama’s Urban Paleo Recipes

Sweet P Sliders by Mama’s Urban Paleo

Sweet P Sliders by Mama’s Urban Paleo

Ingredients 2-3 lbs of grass fed beef 3 Large and long Sweet Potatoes 1 large red apples 5-6 strips of THICK cut bacon 1 tablespoon Braggs Coconut Aminos 1 tablespoon dry rub Organic Extra Virgin Olive Oil 1-2 tablespoons EVOO salt and pepper to taste Directions First you want to marinate the beef with the coconut aminos and the dry rub. You can go ahead and preheat the oven to 400 degrees. Sweet & Savory Yumminess Returns Dice the apples in to bite size pieces. Cut the bacon from left to right. I’d say about 1/2 inch wide. Place the apples in the skillet with 1 tsp of Ghee ( or unsalted butter) over medium heat. Sauté for 5-8 mins. Try not to over cook because they will become too mushy. Add the bacon at about 4 mins in. Sauté until bacon is mostly cooked. Transfer the bacon & apples to the bowl with the Grass Fed Beef and mix. Slider Size Once you have the beef, bacon and apple mixed well, you will want to make the patties petite but hardy, not too big and not too small. Slider Size 😉 The rest is easy sweet peasy! We all know how to make a burger on the skillet! If not, heat skillet to medium heat. Put patties in the skillet for 4 mins each side. That should do perfectly. The Best Kind of Buns are the Sweet Ones Slice sweet potatoes in a circular fashion about 1/2 inch thick. place on a cookie sheet or baking pan and drizzle with the EVOO and salt & pepper. Bake for about...
Paleo Pork Chops Revived by Mama’s Urban Paleo

Paleo Pork Chops Revived by Mama’s Urban Paleo

Ingredients 2 lbs or 6 boneless, thick cut, pork chops 1 1/2 cups almond meal 1 tsp paprika 1 tsp garlic powder 1 tsp chipotle chili pepper 1/2 tsp cayenne pepper Salt & pepper to taste. 2 cage free/ farm fresh eggs 1 cup coconut oil Directions Mix all the dry ingredients in a small mixing bowl. Heat a medium skillet with the one half of the cup of coconut oil. Dip the pork chop in to the whisked egg, then in coat it in the almond meal mixture. Place in the sizzling, heated skillet. 3-4 minutes per side. Transfer to a plate and repeat until all 6 are cooked. Sweet & Savory Bliss I like to place my pork chops on top of sautéed Apples and Bacon. Slice the bacon in to inch size pieces & place in skillet on medium. Sauté for about 8 minutes. Add 2 chopped apples and sauté for another 10 minutes. Be careful not to over sauté as the apples become too soft. Keep It Simple Side A side Kale salad gives it a nice finishing touch! Dressing for Kale Salad: 2 tsp olive oil. 1 tsp balsamic vinegar Squeeze 1/2 of a fresh lemon Salt & pepper to taste.   Caveman Approved A simple Paleo dish that is easy to prepare and will have your family asking for “More...
